heavens i haven't posted in forever! back in may i packed up my kitchen to live in a camper for 2 months while paul built our dreamhouse, and then it took another month or so to get back into the swing of things and to unpack all of my cake gear, set up my craft room, and organize my life. did i mention we are getting married on new year's day?

so, i haven't been baking or posting much. i did make this amazing chocolate peanutbutter three-layer cake last week though. the recipe can be found in sky high cakes and this picture is deb's over at the smitten kitchen. though i haven't been doing any blogging of my own, i have been reading other bakers' blogs. i'm slightly obsessed with deb, and for a little while she was my new blog crush and i wished for her to be my best friend. (hope it's ok i'm using your photo deb, like you're really even reading or seeing this...)

i've moved on to crushing on photographer blogs, florist websites, dessert table blogs, sugar cookie flicker accounts, weight loss blogs, cakepop blogs, dental hygiene blogs, & neurotic dog blogs.

i'm slowly getting back to baking though -- the holiday season is quickly ramping up. to start it off is my older sister jennie's 36th birthday. i'll be making these and hopefully posting more about them sooner than later... can't wait to boil me up some frosting!

i cannot stop thinking about pie -- grasshopper pie in particular. creme de menthe, creme de cacao, chocolate crumb crust, cabot whip cream, & mini chocolate chips -- how can you go wrong? at first i hesitated -- it's not really that decadent of a dessert -- but the liquor is actually kind of spendy. you just can't buy small bottles of creme de menthe & creme de cacao! oh well, that means more grasshopper pies must be made!

meet ted. ted asked me to make a cake for his english teacher wife who loves books and camels. he asked that they be riding the camel, with their black dog running along beside them, and camel's hump and a sun in the background, with a poem on the other side of the book. I think I like ted.

the detail is all made out of marzipan. yummy! goes well with the chocolate raspberry almond buttercream cake! can you tell this is a book? alexa is turning to year/page 30!

i've always wanted to try baking cake batter inside ice cream cones. yesterday was my boss' birthday, and since i am unofficially the "resident baker" at my work, i volunteered to create the dessert.

martha stewart's cupcake book says to cover a tube pan in a double layer of tinfoil, poke holes through it with only about an inch of the cone showing, and to put 2-3 tablespoons of cake batter in the cones. i guessed that a "tube pan" was a bundt pan, and put paul to work creating the perfectly sized holes for the cones. i filled them too high, some of them ran together, the cones started unravelling, and became slightly soggy. they were not going to look good presented in the tinfoiled bundt pan. so, i thought fast and baked up three 6" rounds. the cones are double chocolate chip, as is the mini round in the middle. the mini rounds on the top and bottom are regular chocolate chip cake, with chocolate pudding in between the layers. not perfection, but it did taste good, and my co-workers were impressed with the presentation of the ice cream cone cake bouquet...

dear readers,

did you think i stopped baking? fear not! i've been working away in my kitchen -- just not as much. for this valentine's day, in addition to making cupcakes (red velvets and devil's food minis)...

... i tried my hand at sugar cookie-making and decorating. here's my family's traditional sugar cookie icing (made with butter, powdered sugar, and milk):

And here's the meringue flooding technique that gorgeous cookie-decorators (whose blogs -- click here & here -- i've been perusing daily) use. it's a bit tricky and time consuming, and there is a HUGE learning curve. i will get there. can't wait to try my hand at shamrocks for st. patrick's day...

Debbie was born in 1959 and her daughter threw her a surprise sock hop. the black is marzipan, hot pink is fondant. the records had different 50s words and musicians on them: elvis, chuck berry, fats domino, doo wop, blueberry hill, rock-n-roll, haley and the comets...

the surprise on the inside (that i unfortunately don't have pictures of) is a chocolate and white checkerboard!

a big thanks to Maryann the CookieArtistan. when i was looking for ideas i came across her gorgeous sugar cookies and asked her where she got her cookie cutters. she answered immediately and i was able to order cookie cutters from this great site: The Cookie Cutter Shop. i just wish my designs could have come out as perfect and detailed as Maryann's.

i made this cake for paul's sort-of boss's holiday party. it was my first attempt at chocolate dipped cake balls. they were delish, but very tricky to dip. i've got to perfect my method. i mixed white snowflake sprinkles, white non-pareils, & blue shimmery sprinkles for snowflakes. The minis were red velvet, as was the snowman. his corncob pipe was shaped from marzipan.

making this was so much fun. anyone have any holiday party needs? i'm your gal!

this month's msc club choice was the perfect preview for thanksgiving. 2 cups of sweet potatoes in the batter? no milk or oil? where would the moistness come from? obviously you have never baked sweet potatoes for over an hour so their juices seep out and caramelize. holy candied sweet potatoes! i baked these the night before so i could save my fingers from burning...

i woke up at 6 and was finished with the whole process by 8. waking up this early for me is not easy. but one must wake up early on thanksgiving morning to get the turkey in the oven, so this too was a sneak peek of sorts. mash potatoes until they are smooth & drink coffee until you are awake.

the batter tasted delicious! while the cupcakes were baking, i made my own caramel (so simple this boiling of sugar and water!) and caramelized myself some sweet and crunchy pecans.

next came the broiling of the marshmallows. have you ever tried to make pyramid stacks of mini marshmallows? have you ever tried to take a melted pyramid of sticky marshmallows and transfer them to waiting sweet potato cupcakes? not easy.

for my next 12 i nestled the cupcakes back in their pan and broiled the marshmallows right to the top of the cupcakes. much easier! i stuck a few pecan pieces into the melty marshmallows and voila!

these tasted so GOOD right out of the oven -- melted sweet goodness with a slight pecan crunch on top of moist sweet potato heaven. just like the candied sweet potatoes on the thanksgiving table.

these were favorites with everyone, including paul who doesn't like sweet potatoes.

these will definitely be repeated! in about 11 days...

word of mouth is starting to work. about a month ago i donated a cake to an on-line auction fundraiser for the Flynn. a few people bid on one of my cakes, and so far, at least three of the people who didn't win the bid called me anyway! one woman called because she was planning a surprise party for her husband's 60th birthday. he is a maple sugarer, so she wanted to pull that theme in a little bit, but since it was a fall birthday, and sugaring doesn't start until the spring, we went with more of a fall theme. here are the pics:

MarthaStewartCupcake Club Bonus: banana pecan with caramel buttercream

september's MSC club bonus was to make banana pecan cupcakes. i never got around to it. but, recently, i just happened to have some rotten bananas that were begging to redeem themselves in the form of delicious baked goods. how could i not oblige them? and what perfect timing -- book club tonight and grey's anatomy night with the girls tomorrow.

i don't really have much to say about the cupcake part -- pretty standard, though i see no need to splurge with 3 cups of cake flour. i'm sure regular flour would make the cupcakes taste pretty similarly. i did use cake flour -- i don't like to stray from the recipe first time around.

on to the frosting... caramel swiss meringue buttercream frosting. first, a confession: i have never made my own caramel before. i thought i had. i claimed that melting butter, sweetened condensed milk, and those caramel cubes was making my own caramel. i really did think that was homemade. but now i know the difference. making your own caramel entails boiling sugar and water FOREVER until it turns a dark amber. i watched it and watched it and i thought it was never going to turn dark amber like martha promised.

it finally did though, and then i added the heavy cream. it sizzled and sizzled and bubbled as i stirred until it really did become a very delicious (and HOT) caramel. then i let that cool. (i decided i would try to speed up the cooling process by removing it from the hot sauce pan, but it turns out that it cooled down too much, and i needed to reheat it anyway to turn it liquidy again).

the next step: mix the butter just enough to soften it, then set aside. this is the step where i realize that a great thing for someone to get me for christmas is a second kitchen aid mixing bowl. i had to set the butter aside and wash my one bowl (sad, single, lonely bowl) for step 3.

step 3: prepare simmering hot water bath in large pot. whisk egg whites and sugar in mixing bowl in hot water bath until sugar dissolves. then, using the whisk attachment, whisk warm sugary eggwhites until they are fluffy, white, and meringue-y. amazing! i watched the eggs transform before my very eyes.

step 4: add the softened butter.

step 5: add the caramel and beat with paddle attachment for 5 minutes. another complete transformation occurs: curdly looking eggwhite/butter mixture turns into light whipped ribbons of frosting.

martha describes it as a frosting that is "at once rich and ethereal," and it is sooo true. incredible.

i piped the frosting on with a 1M tip and sprinkled mini chocolate chips on top.

final step: take a bite!

i'm so intrigued with this swiss meringue buttercream and with making my own caramel. there is something so satisfying about the simple act of melting sugar and tranforming into something sweet and frostable. this frosting would be great on apple cupcakes -- caramel apple cupcakes -- perfect for fall and halloween parties. switching maple syrup for the caramel might be an interesting adaptation as well.

book club approved. hope the grey's girls like them...

MarthaStewartCupcake Club: pumpkin patch cupcakes

this month's martha stewart cupcake club challenge was the perfect opportunity for a fall photo shoot. i figured i should go out for some pumpkin inspiration, so that's what i did (in addition to reading all of the other MSC bloggers who actually posted on time):

pumpkin spice muffins with cream cheese frosting: yum, and not all that tough. i've been baking for quite some time now, so i always have nutmeg, ginger, cloves, & cinnamon on hand, not to mention pumpkin puree. some of the msc bloggers mentioned that pumpkin puree was hard to find this year. a shortage of pumpkin? not in my neck of the woods. even though pumpkins abound in vermont this time of year, i don't think i would ever attempt to make my own from scratch -- kudos to those msc bakers who did.

i was more excited to try my hand at working with marzipan for the first time. in my opinion, martha's cute little hand-made marzipan pumpkins were the piece-de-resistance (please say with french accent) to these fall treats.

the cream cheese frosting was a hit with paul. and our cat... we woke up this morning to find that she had licked the frosting off the 6 cupcakes that we'd left on the counter. exhibit a:

i'm really surprised that martha doesn't have a home-made marzipan recipe in her new cupcake book. it was nice to have the ease of using the pre-made stuff, but i was and am eager to try making it from scratch, or at least from almond paste. does anyone have a good marzipan recipe? i'll keep looking.

the marzipan was really easy to work with -- just a little messy adding the dye. but they sure were delish!

and, as i mentioned before, they stole the fall photo shoot show.

i have a job next weekend for a maple-sugarer's birthday, and am going to make marzipan maple leaves as cupcake toppers. glad to have had the practice this week.

i couldn't have made this up!

The cake was a smash hit. I personally loved it - I thought the strawberries added a nice freshness to it - not that the cake really needed that - it was already very moist and delicious. The decoration and the icing were not only good looking, but also very tasty - I have to say I've never eaten really good cake roses - yours were the first! Many people at the party said it was the best cake they've ever had. I'll certainly tell all my other friends about you.

MarthaStewartCupcake Club: zucchini spice

well, it's a week late, but here it is:

introducing: zuchinni spice muffins!

this is my first martha stewart cupcake club entry, so i figured i need to intro the book, and myself a little bit. you can tell a little about me by the pink & white polka-dot apron in the background and the oven mitt that says "domestic diva." the white hat with the pink minnie mouse was a gift (i don't really like disney much), and the pink sequined hat is what i hope to wear one day when i can dance like a hip-hop goddess.

on to the cupcakes!

paul grated the zucchini. at first i started peeling it, and then i decided i needed to shred it, until we decided that it indeed needed to be finely grated (and then drained). who knew the ways of preparing zucchini could be so complicated.

i halved the recipe, because we (who are playing "the biggest loser" with a group of friends), don't need 24 cupcakes lying around. halving the recipe also gets my brain working -- it's tough work remembering i need just 1 egg instead of 2 if i'm halving it, and only 1/4 a tsp instead of 1/2! critical measurements...

i wanted to use apple sauce instead of oil, but didn't have any applesauce. i guess work will get these tomorrow.

while the cupcakes baked (even though i halved it, they still needed the full 20 minutes), i washed.

i took them out a few minutes before the full time, so they turned out a little gooey. not quite a cupcake, not quite a muffin, not quite zucchini bread.

i didn't frost them because there was no cream cheese in the house, and again, we're trying to be big losers here. wish i could claim that these things were heart healthy... does being able to see the green zucchini specks count?

about a month ago when i was perusing the "internets" for lemon chiffon icing recipes, i came across a lovely blog called the tender crumb. she had amazing pictures of the delicious things she had baked as part of her membership in a club called "Tuesdays with Dorie." a visit to TWD introduced me to about 50 other sites and bloggers (mainly women) who have gorgeous blogs dedicated to baking. each week these women bake the same item from Dorie Greenspan's cookbook and share their insights, tweeks, mishaps, & ideas. they are baking their way through her cookbook! at first i thought these women were crazy -- who has time for this? but i was strangely intrigued and found myself checking their sites almost every day. paul was nervous. and then i watched julie & julia and was inspired. could i too follow my dream and become a baker and a blogger, and perhaps get my own book deal? i mean if jen of cakewrecks did it by posting ugly cake photos and adding snarky comments, then why can't suzanne "Q Monroe" lowell, of let them eat cake do it?

i caved. i joined one of those baking blog clubs! the one i joined is a bit more manageable for my crazy life. it's called the martha stewart cupcake club. in this club, we bake one recipe a month from martha stewart's new cupcake book (which is very cool). i'm already a bit behind though! i was supposed to bake zucchini spice cupcakes and post pictures and my baking tale by yesterday the 15th. i have a very good reason why i am behind though...

i am being hired for my very first wedding! i baked all day sunday -- 4 different recipes -- 2 different cakes -- 3 different types of frosting! that topic deserves a blog post of it's very own. which is coming soon. with pics.

but this post is just to apologize to my new blogworld friends -- i'm sorry i haven't posted or baked the zucchini spice cupcakes yet. please don't kick me out of the MSC club! i promise i will catch up.
